Restaurants and other food establishments are required by law to post their most recent inspection permit. The Daily Citizen-News lists areas where the establishments are out of compliance with the regulations. All food in cooler were found out of temperature. Refried beans cooling for more than two hours in reach-in still at 80 degrees. Must follow proper cooling procedures, time and temperature requirements. No thermometers found in any of the five coolers used. Must have thermometers in all cooling units. Shredded lettuce stored in water in prep cooler. Do not store food in standing water. No hair restraints worn by employees. Must wear hair restraint. Wet wiping cloths observed on table/prep surfaces. Open cans of food stored in cooler. Food cannot be left in open can. Store in food container. Must clean A/C unit fan to remove dust debris (A/C above prep table). Service window left open while not in use. Flies observed in kitchen. Must close establishment due to score and failing to meet previous hearing requirements.
